Located on the emblematic Paseo de la Castellana in Madrid, La Maruca restaurant joins two other businesses of the Cañadío Group, originally from Santander, which have opened in the capital: La Maruca Velázquez and La Maruca López de Hoyos. The restaurant offers a menu with products from the north region, combining quality with a modern approach. In this context, Manusa has installed two automatic doors in its kitchen that guarantee the comfort of the staff and the customers, without losing the spirit of the Cantabrian brand.
Installing access in restaurant kitchens presents specific challenges. One is maintaining the business's operational efficiency without compromising employee comfort and the place’s hygiene, as manual doors present a barrier to the smooth flow of staff carrying plates and trays. Also, a traditional door can expose customers to smells, noise, and the busyness of a kitchen. Furthermore, in the case of a carefully designed venue such as La Maruca Castellana, the solution must blend in perfectly with its clean, warm-toned interior design.
Automatic sliding wood-panelled doors
To meet these needs, two automatic sliding doors with one leaf each have been installed, giving direct access to the kitchen. Both have been customised to fit in the restaurant’s aesthetics, with wooden floors and surfaces. Manusa has the capacity to customise its doors with any material; in this case, the leaves have been panelled entirely with wood, which maintains the visual coherence of the restaurant while reinforcing the discretion of the access.

The opening speed of the doors facilitates the agile flow of waiters, who can cross them without physical contact, whether or not they are carrying loads. To avoid possible collisions, especially at busy times, a rectangular window has been installed in each door to provide a view of the other side. This element also gives customers a small window into the kitchen, adding a touch of transparency and dynamism to the visit. On the other hand, in a restaurant, it is easy for the service staff to get oil or sauces on their hands, so installing automatic doors prevents them from staining their uniform, improving the hygiene of the premises.
Manusa’s solution provides an effective separation between the kitchen and dining room. The system only opens when necessary, thus minimising the passage of odours and noise. This insulation capacity also favours effective air conditioning of the dining room, since it reduces the temperature changes with the kitchen, and this allows a better energy efficiency of the premises.
